卵磷脂 lecithin
範圍註 ：
一種黏稠的含油液體，存在於某些動植物體內。卵磷脂是由脂肪酸（硬脂酸、棕櫚酸、油酸、次亞麻油酸和亞麻油酸）的雙酸甘油脂結合磷酸的膽鹼酯類而成的混合物。商業上製造卵磷脂是由大豆、玉米及蛋黃取得，可用於乳化、分散和潤濕處理，可加入食品、漆料、印刷油墨中，在塑膠鑄模中作為脫模劑，在紡織品中作為潤滑劑，以及作為處理皮革用的表面修光劑。

| 英文.... | A viscous oily liquid that is found in certain animal and vegetable matter. Lecithins are composed of a mixture of diglycerides of fatty acids (stearic, palmitic, oleic, linolenic and linoleic) linked to the choline ester of phosphoric acid. Commercially, lecithin is obtained from soybean, corn, and egg yolk. It is used for emulsifying, dispersing, and wetting, added to food products, paints, printing inks, plastic molding as a release agent, textiles as a lubricant, and leather as a dressing. |
